Lu Siqing & Taipei Chinese Orchestra at the Zhongshan Hall delivered one marvelous night of violin concerto. The color of sounds of Sarasate’s Zigeunerweisen & Carmen Fantasy accompanied by TCO is a little bit weird, but Lu is a really magic virtuoso, and this brand-new experience is not bad. “Abendlied eines Fischers” (or Fishers’ Nocturne) almost made A-Mao cry not only because Lu played well but also because it is the encore piece when he was a member of the Youth Band of China Youth Corps participating in WASBE 1997 conference in Schladming, Austria, and it made the other teams stand up and clap. By the way, looking forward to WASBE 2011 conference in Chiayi, Taiwan.
呂思清與台北市立國樂團,在音響其乾無比的中山堂中正廳,為我們帶來動人的小提琴協奏曲之夜。上半場的「流浪者之歌」與「卡門幻想曲」由國樂團來伴奏;坦白說,第一次聽國樂的A-Mao覺得整體音樂的色澤有些奇怪。17歲就獲得帕格尼尼小提琴大賽金獎的呂思清演奏薩拉薩蒂的眩技曲目遊刃有餘、魅力不凡;但是,紹恩與北市國其實有些疏失,不過還算是個新奇且不錯的聆賞體驗。反而是「漁舟唱晚」,讓A-Mao忍不住熱淚盈框。不只因為琴聲優美,也因為想起1997年在奧地利Schladming、與「幼獅管樂團」參加WASBE

いつも海外旅行・出張を終える前に、牛肉湯麺を食べるために、台北での「劉山東小吃店」を行く事について考える。この店が箸のような太麺を提供するけれども、A-Maoは細くない細麺が好きです。芳醇な牛肉スープは爽やかで、蒜苗(ソンミョウ)は香りをより抜群に作る。少し酸菜(スヮンツァイ)を加えると勧められます。
Before finishing travels or business trips abroad, always thinking of visiting Liu-Shan-Dong Noodle Shop to eat a bowl of beef soup noodles (without stewed beef). The mouthfeel of thin noodles is nicely firm—they provide thick ones also, rich beef soup is not oily, and garlic sprouts makes aroma more distinguished. A-Mao’s way to taste is to enjoy the 1st third in the origin, the 2nd third with some suan-cai (or Chinese sauerkraut), and the final third with a dash of dou-chi (or fermented black beans). And then the tongue would be like surfing on waves.
每次到國外旅遊或出差,旅程結束前夕,念茲在茲的,就是回台灣到「劉山東小吃店」,嗑一碗吃了好多年的的牛肉細湯麵(50鋃)。其實,這家的紅燒與清燉牛肉麵也很好吃(110鋃),只不過性價比比較低罷了。雖說是細麵,還是相當有咬勁;香濃的牛肉湯頭不油不膩,取代蔥花的蒜苗讓湯頭更有個性。A-Mao的嗑法是先吃原味的三分之一、酌量加些酸菜再吃三分之一、最後再添點辣渣蔭鼓吃完最後三分之一;這樣,才能真正得其箇中三昧。

一日路過金山南路,發現有家小店在賣槓子頭,也就是火燒。一個才廿鋃、生意無敵好、加上沒吃過,那麼就買一個來嘗嘗吧。剛出爐,所以燙得很;個頭小,但拿起來挺有份量的。待稍稍涼了拿出一看,竟然有個模糊的陰陽八卦圖!是怎樣?要收服什麼魍魎鬼魅嗎?外皮驚異地酥脆、內層消魂般耐嚼,每一口都是濃濃的麵香。最後,A-Mao這隻愛吃鬼已經被降伏了。

「許記生煎包」(シュイジー・シェンチェンパオ)はA-Maoの至愛の屋台。価格は年々上げられていますが、変わらないものはジューシーな豚挽肉とキャベツの具、煎りゴマの良い香りといつも大勢のお客さんです。食べたい?番号札を取ってください!
Fell in love with Hsu-Ji sheng-jian-bao, or pan fried stuffed mantou, more than 10 yeas before, A-Mao was a high school student, and then 3 pieces cost 10 NTD. Before leaving the R.O.C Air Force Band, he presented it to the other brothers in the army, and then 5 pieces took 20 NTD. Now, under financial tsunami, 5 pieces cost 30 NTD! The price is always increasing. But things not changed are thin bun dough, crunchy bottom, aromatic sauteed sesame, juicy stuff made from cabbage & pork as well as a crowd of buyers. Hsu sheng-jian-bao was inlaid into A-Mao's memory at random and is his old lover. Sometimes both of them would be in a flood of people to think of passing time.
與「許記生煎包」的初戀,是十多年前在高中就讀的年代,當時,三個十鋃。空軍樂隊退伍前夕,與同梯「勞涼」,那年,五個二十鋃。而在金融大海嘯的當下,五個已要價三十鋃!價格不斷驚驚漲;不變的是薄薄的外皮、與脆脆的焦底、還有豬絞肉與高麗菜碎的美味多汁內餡、加上焙炒芝麻的衝天香氣、以及永遠熱絡的購買人潮。許家生煎包被散落地鑲嵌在過往的回憶中,閃閃發光;也是A-Mao的老情人,三不五時要前去相會敘舊,一起在人群中緬懷流逝的時光。【许记生煎】

Ultrackerのすぐそばの美味に関して、「巧合珍」本店はセカンド・トゥ・ナン!お味は「巧」い漢方風味で、食卓の上の辣渣油は、本当に麺と鹵味に「合」う。しかし、この店の牛肉は「珍」しくない。したがって、牛肉湯麺とおいしい鹵味をご注文して下さい。
When it comes to delicacies near by Ultracker, 巧合珍 (Qiao-He-Zhen) is the 2nd to none! Even choosy honcho A could not pick fault before……Anyway, this store distinguishes itself by flavor of Chinese herbal medicine, and you can smell it from far away. The chili pomace oil with rare aroma of nuts on the table is not too hot but outstanding and goes so well with noodles & lou mei. Beef soup noodles (without stewed beef which is overcooked) & lou mei seasoned by lots of spring onion is highly recommended.

ぺてこべさんによって推薦される「北方麺飯館」へ行きました。実際、この店がおいしいかどうか、地元のA-Maoはちょっと心配している。酸辣湯は彼の幼年時代の山東味道であるようでした。さて、牛肉捲餅は牛肉と甜麺醤とネギの完璧なハーモニーでした。ああ~「言語の壁」はありますが、境界がグルメの間でありません♪
Mao likes the trilingual blog of Petekobe and is very interested in which Taiwanese food is fit for this Japanese guy, who rarely enjoys the smell & taste of stinky tofu. Petekobe highly recommends 北方面饭馆 (literally north noodle & rice store), and A-Mao was curious whether or not it is definitely good to eat, in terms of a local point of view. Well, the sour and hot soup a little bit seemed like the bowl in his childhood. Regarding the beef roll, A-Mao was touched beyond words! Perfect harmony of pancake, stewed beef, sweet noodle sauce & spring onion. Hmm……there is no border among gourmet, but the language barrier.
Petekobe的三語部落格A-Mao很喜歡,也好奇有那些台灣食物,符合這位罕見地喜愛臭豆腐的日本人胃口?P桑大大推薦林口「北方麵館」的「牛肉大餅」。然而繞了繞文化三路,沒發現「北方麵館」、只發現「北方麵飯館」XD;半信半疑的進去,沒找到「牛肉大餅」、只找到「牛肉捲餅」XD。真是給他不精準的情報啊!也開始懷疑P桑的舌頭,是否也一樣不精準?加點的酸辣湯,依稀有那麼點兒時記憶中的山東味;不過,稍後上來的牛肉捲餅,徹徹底底地震懾了A-Mao。焦香的麵餅皮,紮實地包裹著風姿迷人的滷牛肉、甜麵醬與蔥段,美味可口又抵食!日語中有「言語の壁」一詞,意味著語言是溝通的障礙;不過看來,美食是沒有藩籬疆界的。

A ginger field in the mountain—山中的薑園 Come closer: busy harvesting—靠近點,收穫忙
It is one of excellent gingers in Taiwan, which is as beautiful as giant. Because it grew in high-altitude Dongyan Mountain, the texture is so hard that you can use it as a blunt object to kill someone.
台湾の素晴らしい生姜:型態優美、體格碩大。由於種在高海拔的東眼山上,薑的質地硬到可以當鈍器殺人! The left is a choosy ginger distributor, Mr. Huang, and the right is a little bit famous farmer as well as A-Mao’s father, Mr. Li. Both of them closed a deal in 2008.
左邊是批發商「火土伯」(黃火土),右邊是在北台灣薑母鴨界略有名氣的「薑爸」(黎金量,也是A-Mao的阿爹)。2008年的十二月,龜毛的火土伯看上了薑爸用心種植的生薑,直說這是台灣最最優秀的,可不輸給宜蘭喔!成交的兩人,合影留念。

台北大学を卒業しました。そして、隣の「香港家鴻」は仲間たちの不揮発性メモリー。これは鈴さんの愛しい焼鶏腿飯で、A-Maoは焼鴨焼肉飯を推奨します:味付けは美しく、火加減はよい。広東語を話すシェフは、他のおいしい広東料理を提供する。唯一の欠点が、ときどきご飯の品質管理は良くないという。
The A-Mao is missing siu laap (or siu mei ) of 香港家鸿 (Hong Kong Jia-Hong) so much because its fantastic taste was accompanying his college life at NTPU (National Taipei University). These days, he told about this store with You & Ling, his classmates before and now a couple having an adorable girl, and Yun, a member of NTPU Winds Orchestra also. And all of them have the same, inerasable memory. This is rice with roasted chicken leg, Ling's beloved one, which looks so great, whereas A-Mao's most favorite is rice with roasted duck & crispy roasted pork. Cantonese-speaking chefs provide the other delicious Cantonese cuisines, too; however, the only drawback is that rice would be out of control on occasion.

Because of Petekobe's article, A-Mao went to Ji-Yu-Yuan to experience what is noodles from the north part of China. Assorted beef noodle soup (or ngiu chap noodle soup) and pork dumplings (or jiaozi) was ordered. It was not lunchtime then, but their business is really good. Good look! The soup tasted fine, but it was dressed too sweet, and it is a minus that there was basil. Overcooked assorted beef made A-Mao sad, and the noodles was very normal. In fact, nothing about the north……
看了日本網友ぺてこべ的博文,介紹在龜山有間「北方麵食冀豫園」,依然保持著古老的風味。因此,住在桃園的A-Mao,一日特地前去“考古”;看到位置與招牌,才突然想起:他的一位親戚,正是這家店的供應商之一喔!點了牛雜麵與鮮肉水餃;雖說已過下午一點,生意還是給他不錯。上桌的熱騰騰湯麵,賣像頗佳。先喝一口湯,味道好是好,但調味實在是太甜了!另外,添加的九層塔只有扣分、並沒有加分的效果。再吃一塊牛雜,燉煮到軟趴趴的,著實浪費了內臟該有的嚼勁。最後論及麵條嘛……亂沒特色的。坦白說:一點也不北方。
But the pork dumplings, filled with cabbage & spring onion also, changed his first impression. The stuff was seasoned fresh & juicy, whereas the mouthfeel of dumpling dough is sturdy. Next time, A-Mao will still order dumplings, whatever pork or leek ones. Their spring onion pancake smelled so good, and the other customers’ steamed dumplings & hot and sour soup looked great. Will not go for their noodle soup anymore.
失望地吃了快半碗麵,一點也不寒酸的水餃才亮像。先來一個原味的,品嘗到內餡的鮮美多汁;沾些佐料,更彰顯了餃子皮的扎實口感。嗯,這才地道嘛!除了一個餃子煮破了之外,讓A-Mao對冀豫園的印象大逆轉!下次來,還是要吃水餃,管他是鮮肉的還是韭菜的、門口現煎的蔥油餅聞起來可真香、隔壁桌的蒸餃和酸辣湯看起來也不錯……就是不會再點他們的麵了!

桃園大廟口の蚵仔麺線は珍しい逸品です。新鮮な牡蠣と旨い豚の大腸だけ、「あさぶる」のうずら卵や安い団子などなし。麵線が手製でないが、風味は素晴らしい!少々の烏酢または辛いソースを加える事は推薦されます。注:「あさぶる」は台湾語です。これは「あさふろ・朝風呂」から来るようでした。意味は不必要なことである。
Oyster vermicelli is a popular light repast in Taiwan. Nevertheless, now it is hard to find a one which is traditional and without unnecessary ingredients, such like egg flower, quail's eggs or various cheap balls. This bowl with lots of oyster & pork intestine is served near by Taoyuan Jingfu Temple. Although the vermicelli isn’t handmade, its taste and aroma is rarely wonderful! Don’t forget to add some black vinegar & special hot sauce.
二十多年前,公路局三峽站對面的蚵仔麵線,是A-Mao與他阿娘永遠思慕的小吃、和永遠不變的話題:濃稠的柴魚芡汁、噴香的蒜酥與油蔥酥、手工的紅麵線、帶勁的滷大腸、加上甘美的裹粉蚵仔,少少份量當點心,讓母子倆幸福滿溢。然而,啥時開始,市面上的麵線裡多出了“阿沙不魯”的蛋花、鵪鶉蛋、或五花八門的廉價丸子?近來在位於桃園的公司,中午吃外送時,竟吃到一碗糜爛糊塗、又滿是味精、又略帶藥水味的麵線(大腸跟筍絲似乎有問題)!憤怒地整碗倒掉;心中OS:煮出這種玩意兒的,還算是個人嗎?凸!不過,在桃園景福宮旁邊的「桃園大廟口蚵仔麵線」,卻與記憶中的美味頗為神似:好吃的小顆蚵仔與香Q大腸給得很大方;料理得也挺不賴的。建議加些烏醋與特調辣醬;不建議他們家的甜不辣。

Security Show at Big Sight in March is the Japan's largest exhibition for security & safety industry. Compared with it last year, the scale this year is small, and stream of people is not growing. Because of Financial Tsunami! Anyway, A-Mao went to Matsumotorou in Hibiya Park before and got a nice experience in 2008. This time he visited its branch in Big Sight and chose beloved omuraisu. Though the omelet was a little bit overdone, with hashed beef sauce—better than the head store, the whole plate was very enjoyable. Maybe to taste Matsumotoro has become his must when tripping in Japan.
每年三月上旬在東京Big Sight的Security Show,是日本安全監控的一大盛事;跟往年比較起來,09年的規模小了很多,人潮似乎也有下滑的趨勢,金融大海嘯的影響,實在不容小覷!話說回來,與孫中山革命滿清頗有淵源的松本樓,在Big Sight也有分店。因為有08年在日比谷公園的本店之美好經驗,這次就近,A-Mao完成再嘗一次的心願,午餐點了オムレツライス・ハヤシソース(譯:蛋包飯佐燉牛肉醬)。蛋卷有些過熟,但燉牛肉醬比本店更出色,搭配番茄醬炒飯,除了有那麼點太鹹之外,非常好吃有味。A-Mao心想:也許品嚐松本楼,已經成為他在日本差旅時的一個傳統。

It was lightly snowing in Tokyo this March. Albeit it is strange, A-Mao's main duty was foraging then. Around Kanda Station of Yamanote Line, there are so many different restaurants that hard to pick one up. After walking around for quite a long time, it is impossible for him to reject the half boiled egg on the billboard of Kanda Wise Ramen (神田ラーメンわいず). Seaweed ramen was selected, and one bowl of rice was ordered also because that Japanese ramen is extremely salty and it is so strength-consuming while doing business trip alone. The shouyu-tonkotsu soup with aroma from oceans was really impressive. Tender & juicy chashu was not worse than yummy half boiled egg. The rice was finished, and N cups of water was finished; nevertheless, there remained quite a lot of soup because it is salty Stupidly.
三月的一個晚上,東京竟飄起小雪;罕見歸罕見,那當下的任務還是覓食。山手線上的神田駅周圍,有各式各樣的大小餐館,著實讓人難以選擇。東挑西揀,這家要排隊的神田ラーメンわいず(譯:Wise拉麵),看板中的糖心蛋,徹徹底底地降服A-Mao。點了海苔拉麵;因為日本拉麵普遍很鹹、加上獨自出差極耗費體力,另外多叫了一碗飯。洋溢海潮風味的濃厚豚骨醬油湯頭,讓人驚豔!叉燒又軟又甜,硬是不讓心太軟的糖心蛋專美於前。然而,麵湯真的是Stupid
